I would like to understand better the backgrounds of the Soyuz T-6 Interkosmos mission.

From what is my understanding, the Interkosmos program was carried on with all the Soviet-related countries (Poland, Romania, Bulgaria...). Why France jumped in?

Can someone give me some more background info on this or suggest some further reading?

Bert Vis and I have just had our new paperback book "Interkosmos" released, which gives you the full story of this program. Every crewed flight is covered in depth and accompanied by a host of photographs.
