The NASA logo over the doorway of Kennedy Space Center's Operations & Checkout (O&C) building apparently made its debut in 1998. It can be seen during the STS-90 crew walkout. It was not there for the STS-89 crew walkout.

The STS-51C crew wore their astronaut caps during the crew walkout in 1985.

When did they change the logo on the Astronaut Transfer Van from the worm to the meatball? Had to have been sometime in the early nineties but after the maiden flight of Endeavour in May of 1992. STS-49 crew entering van shown here.

You can see the tip of the tail of the NASA vector in this image of the STS-63 crew walkout - but that is the earliest I got.

The STS-26 crew walkout looked a bit different.

Not a walkout photo but found this taken July 23, 1994. Was at KSC for some Apollo 11 25th Anniversary celebrations. This image shows the flight crew leaving the SLF after Columbia's successful touchdown. Van to the left has the meatball logo and the STS-65 landing convoy was heading south on Kennedy Parkway.

Did the 51C crew have those caps in orbit?

This STS-100 crew photo was taken just outside the elevator during the Terminal Countdown Demonstration Test (TCDT) walkout in 2001.

I don't think the large NASA logo on the wall was there for the Apollo crew walkouts.

It is highly unlikely that they wore those caps during the mission as they wouldn't stay put. They may have donned them for a few seconds for a photo-op? Hats go on top of the head but in space there is no "top and bottom" since those are in essence gravity-defined terms.

Crews have worn caps on other missions. Apollo 12 and Skylab 2, for example.

As noted, ball caps are not that unusual in space (examples: 1 | 2 | 3 | 4).

That said, I haven't seen a photo of the STS-51C caps in orbit.
