I have recently read about the mechanical interface between the Orion command and service module using devices called "compression pads."

I am trying to determine if the Apollo command and service modules used a similar mechanical arraignment or how they were mechanically connected? I do not recall any openings on the Apollo CM heat sheild like the ones on the Orion.

Yes, Apollo used the compression-pad method to secure the Command Module to the SM. The best description/rendition that I have seen was in Virtual Apollo by Scott Sullivan, published by Apogee Books.

Yes, the compression pads were burnt off during entry.
