I'm wondering about the Apollo Lunar Module and what specific upgrades were done to it for the H Class and J Class missions.

I found on Wikipedia an article that discusses a few J Class LM upgrades, but it seems fairly sparse. The descent engine is mentioned, but was the engine in the Ascent module also upgraded? Was the Saturn V rocket improved to cover the extra weight or was it already capable of carrying the projected loads of later missions?

Finally, I recall reading somewhere that there were plans to upgrade the Lunar Module for a six day stay on Apollo 20. Is this true and what sort of upgrades were going to be done to enable that?

Ascent engine upgrade wasn't required since there was no need (longer lunar stays affected landing weight and not ascent). The largest mod was the lengthening of the descent stage propellant tanks and upgrades to batteries.

Saturn V upgrades include deletion of ullage rockets, F-1 thrust increase and some stage mass reduction.

Not that I am aware of. Apollo 20 got cancelled quite early in the planning stages but this is what I believe it was destined for:

Apollo 20: J-Mission No5, launch December 1972. Landing at Tycho crater, deploy ALSEPs to complete ALSEP network. Retrieve portions of Surveyor 7. 3 x EVAs.

Hardware: SA 515, CSM 115A, LM 14.

All times are CT (US)
