When listening to the audio clips from the Apollo Lunar Surface Journal transcripts there is no tone or bleep after each transmission (the second or so of time taken for the radio transmission to be received) when the crew are in the LM preparing for EVA, however when conducting EVA on the surface there is an end of transmission (TX) bleep... does anyone know why?

I seem to remember Glen Swanson researching this when he was the historian at JSC. I think he talked to one of the actual comm guys about the equipment. Perhaps it appeared as an article in Quest magazine at some point? I don't know if Glen checks Collectspace or not, but you could ask him if anyone here has his contact info. I don't.

Glen goes under the username "nasaworm" on ebay so you could contact him via that.

Otherwise there is a background article that Glen wrote for the Mission Transcript Collection a few years ago.
