How common was/is it to postmark items with a date that in fact has passed? I've seen an Apollo 8 photograph of the moon with the "In the Beginning..." quote postmarked December 24, 1968. I also own a photo taken during Apollo 11 that is postmarked during the mission.

In both cases, of course, actually cancelling the item on the date shown would have been impossible. So just to check, the post office will sometimes back-date cancellations for commemorative items? How common is/was this?

It is actually quite common. For special postmarkers or First Day of Issue cancels, USPS currently has a 30 day grace period in force. This is also applied to the KSC handcancels.

Other countries have similar (Germany: 28 days) or even longer periods (France and Italy: 2 months) or handle it in an even more flexible way (Poland and Slovakia).
