Why did they drop the original circle shape and replace it with more of shield shape?

Just a new angle on an old design. It's only for the anniversary patch, the patches for earlier anniversaries were adapted as well. The 25th only used the Eagle and one of the 30th patches had the original design in the lower part of the "3", the other one using the two L's in Apollo for the 11.
