How have astronauts their hair cut in space (ISS) during long time missions?

A couple of recent pictures of Dan Tani can help answer your question.

The IMAX movie "Space Station 3D" also includes a scene in which Commander Bill Shepard gets a haircut from crew mate Yuri Gidzenko. Their equipment seems a little less fancy than Dan Tani's...

How would women cut their hair? If they didn't want a shave-cut?

Suni Williams had her long locks cut to a more manageable length just before the shuttle that brought her to the space station departed for Earth. As a bonus, she arranged for the ponytail to be donated for charity.

In that case, and later during her flight for a touch-up, it was simply done with a pair of scissors and a vacuum device to gather the clippings.

While your question appeared targeted towards ISS flights, some Skylab astronauts got haircuts during their missions too. I've seen a photo of Owen Garriott giving Al Bean a haircut, at least.

I have a similar curiosity as to how ISS/Shuttle/Soyuz crewmembers spit in space. What do they use for a spitoon?

If your question is in regards to brushing their teeth, then shuttle and ISS astronauts do not (spit). As Dan Tani recently said before returning to Earth, "I'm looking forward to spitting my toothpaste out in a sink rather than swallowing it."
