Other than in the cases of the Apollo 204 fire and Apollo 13, does anyone know of instances when Congress was briefed or had formal hearings on the Apollo program? I'm not looking for pre-program hearings on funding necessarily, but more so ones that showed Congress directly what NASA was achieving.

Depending on how you define "briefed", NASA does submit semiannual reports to Congress.

Although it had more prior to it becoming the Non-Technical Reports Server, the NTRS still has a few of these reports available for download.

Congress investigated the Apollo 15 stamp scandal. The entire crew was called before the committee to testify.

Many congressional hearings were held on Apollo. You can find everything you need by visiting the US Senate Library in SR-B15 of the Russell Senate Office Building, and the US House Library in B-106 of the Cannon House Office Building.
