Was there a set number of gantrys on the Apollo programs or did the number change during the subsequent missions? Also, what were the specific reason for each gantry? Thanks.

If you mean the swing arms they were fixed in number for the Saturn V and the Saturn 1B was raised via milk stool to achieve the same geometry.

The big thing for swing arm performance was to leave the vehicle quickly (accelerate hard) then brake to a stop before hitting the service structure.

I meant the red swing arms, didn't they have fuel lines etc

There were actually 3 launch pad complexes used throughout the Apollo program at Kennedy; Pads 34, 37B and 39 (A & B). Servicing all the Saturn V launch vehicles from Complex 39, the red structure towers (known as the Launch Umbilical Towers) carried 9 swing arms, or bridges, for direct access to the space vehicle, along with 17 work platforms and distribution lines for propellants, pneumatic, electrical and instrumentation systems. Swing Arm #9, 320' above the launch base, connected with the Apollo spacecraft that was used by all the Apollo astronauts. Is this what you wanted to know?

I have recently begun my "project" of trying to actually read the entire Apollo Lunar Surface Journal and the Apollo Flight Journal from start to finish. These really are a treasure trove of information. If you look at page 185 of the Apollo 8 Saturn Flight Manual you will find a picture of the gantries and their functions.
