Does anyone know what the inflight maximum velocities were for the Redstone, Atlas, Titan II, Saturn IB and Saturn V were?

I believe the Redstone got up to Mach 5.

You need to define what you mean by 'maximum velocity' better before an answer can be attempted.

For Atlas, Titan and Saturn 1B it would be orbital velocity with some variation depending on the various flights. For Saturn V it would be escape velocity, again with some variation of the different lunar missions.

On edit - another complication is that all the mentioned launch vehicles apart from the Redstone involved staging. Do you mean the complete vehicle or the 'maximum velocity' of the individual parts when staging happened?
