Only two astronauts had the distinction to ride both the Saturn 1B and the Saturn V.

In the thirty six years since they accomplished this feat, did anyone ever ask them to compare the ride?

If so, can you point me to what they said?

Actually, three did both: Conrad, Bean and Stafford.

I recall one of them describing the difference, but I don't remember the details.

Yes I've asked them both. I put the question to Tom Stafford last month in Birmingham. For a simple question I received a wonderful 20 minute answer so there isn't room to put it all down here. I suggest you ask them first hand if you want to "feel" what it was like.

The book Moonshot described the launch on a Saturn 1B from Deke's perspective (not sure if Stafford had any input on that) and it mentioned it was something of a shaky ride. I'll have to check Stafford's book "We Have Capture" to see if he made mention of it there as well since both Apollo 10 and ASTP were covered.

In an interview I did with Stafford back in 2001, we briefly touched on the differences between all three types of rockets that he flew, and he replied:

"Gemini’s a lot more of a sporty ride. The big Saturn was twelve minutes to orbit, four and three-quarters G at maximum. The small Saturn was ten minutes to orbit, about 4Gs first stage. Gemini-Titan, you orbit in five minutes and 35 seconds, so there was over 5Gs first stage, 8 on the second. So the booster going out was really sporty."
