I've seen on a few websites, signed Apollo models such as the command module. How do I know if they are authentic, some are about $500. Are they the real deal?'

Depends on the site. I do know of a few companies who have paid astronauts to sign their models, i.e. Charlie Duke, Buzz Aldrin, etc. and they simply sell them on.

One source for signed models that you can trust without question is the Astronaut Scholarship Foundation's store. Toys & Models also has a signature series, such as the Apollo command module signed by Buzz Aldrin or Charlie Duke.
