I am looking for suggestions for launch viewing options for the SpaceX Crew-4 launch now set for April 21. It will be in the early morning hours most likely and I am interested in public parks/places with a restroom that will be open with parking.

Here is what Ben Cooper advises on LaunchPhotography.com:
The closest and best view will be from the Saturn V Center (3.9 miles, clear view). Tickets will go on sale here.
Otherwise, Titusville (~12 miles at Max Brewer Bridge or elsewhere along the shore) will be the best place to watch; or down at Port Canaveral on Rt. 528 (14 miles, also a clear view).

I watched it from Spaceview Park in Titusville. Nice spot, there were quite some people there but it was not overcrowded. (it was very early in the morning...) Someone had a live transmission of NASA TV / communications running so you could hear what was going on. We had a great view!
Recommendation however for future viewing: If you want to photograph or film a launch, go stand on the real "coastline" and not under the roof of the pier that is going over the water. When the rocket was going further up, I found that roof a tad disturbing.
