I was reading that the Russian 'space' suit, I think its called the Sokol, could be used in an emergency, to do an EVA from one craft to another. I was wondering if the familiar orange suit used by those on the shuttle can be used for the same thing or are they solely for launch and re-entry?

Solely launch and reentry, they don't have the layers that would be needed to survive the heat/cold ( the EVA suits can withstand from 250F to - 250F. That plus the layers to protect from micrometeoroids.
