Photos of the Cape Canaveral area were taken on several Gemini flights.

The Gemini 11 photos are especially interesting because they were taken during the standup EVA by Richard Gordon. What a view that must have been. Gordon took a series of such images on orbit 29, including photo S66-54569 as Gemini 11 flew directly over Cape Canaveral. Gemini and Agena were still docked at the time.

Buzz Aldrin also took a few photos of the Cape area during his first standup EVA on Gemini 12, but the orbital track was further south.

The Apollo 9 photo AS09-23-3544 of Cape Canaveral was taken on March 11, 1969. That is the day Apollo 10 rolled out to Pad 39B.

The photo was taken at 13:07 GMT. The rollout photos seem to show that it was early morning at the Cape.

Apollo 7 photo AS07-08-1893 was taken October 18 at 166:38 GET on orbit 106. Apollo 8 was on Pad 39A during the Apollo 7 mission.

From the mission transcripts at 06 22 38 17 GET:

CDR: The Cape is loud and clear. We can see all the launch pads, and it looks like she's ready for business.

CMP: We can see Saturn V on the pad.

CC: Oh, Roger.

Even when I enlarge this image, I can't see any obvious sign of a Saturn V on Pad 39A, BUT there is definitely a Saturn V-sized object adjacent to the VAB (which may, of course, just be a crawler plus gantry).

In the Apollo 9 photo, I see a light dot on the crawlerway about halfway between the VAB and the MSS. When Apollo 10 rolled out, there were no Mobile Launchers parked outside the VAB.

The Skylab 4 Rescue Vehicle rolled out to the pad on December 3, 1973. The rescue vehicle can be seen on Pad 39B in photo SL4-71-283 which was taken on January 22, 1974.

STS-117 was at Pad 39A when this Expedition 15 photo was taken in 2007.

AS-202 was launched on Aug. 25, 1967 at 17:15 GMT and the video of its separation footage is often mistaken for a Saturn V. As its upper stage moves away the one housing the camera begins to tumble, and records a view back towards Florida as it does so.

The image on the right here shows that view, while the one on the left is a NIMBUS satellite view taken about 45 minutes earlier. The cape is just off screen — but only just.

You can see more of the Florida coast when the camera is ejected from the stage.

STS095-743-033 was taken on 31st October 1998 from Discovery.
Taken during the STS-95 mission from a point over Cuba, this photo shows an oblique view of the Florida Peninsula, with the light blue, shallow seafloor of both the Florida Keys (curving across the bottom of the view) and the Bahama banks (right). Cumulus cloud covers Miami and the Southern Everglades, although the built-up area from Ft. Lauderdale to West Palm Beach can be discerned. Lake Okeechobee is the prominent waterbody in Florida. Cape Canaveral is shown well, half way up the peninsula. Orlando appears as the lighter patch west (left) of Cape Canaveral, near the middle of the peninsula. Cape Hatteras appears top right, with the north part of Chesapeake Bay also visible.

I did find a few photos of the Mir space station and the Hubble Space Telescope with Cape Canaveral in the background. They include STS074-722-038 taken in November 1995, and STS103-501-127 taken in December 1999.

The ISS passes over Cape Canaveral in Expedition 50 photo iss050e038462 taken on February 3, 2017. I believe that is the Soyuz MS-03 spacecraft, currently in orbit and scheduled to land on June 2.

Expedition 10 took photos of the Cape during the STS-114 rollout of Discovery to Pad 39B in April 2005.

STS043-084-031 taken at 12:57:42 GMT from Atlantis orbiting 177 nautical miles (328km) above Cape Canaveral, Florida, 07 August 1991.
Cape Canaveral, Florida, and the NASA John F. Kennedy Space Center are shown is this near-vertical photograph. Numerous launch pads line the Atlantic Ocean coast near the center of the photograph. To the north of the multiple launch pads, the Space Shuttle landing runway, the Shuttle Assembly Area, and Shuttle Launch Pads A and B are visible. To the south of the multiple launch pads are Port Canaveral and the city of Cocoa Beach, Florida. To the west of the space complex, five causeways span the Indian and Banana Rivers. Interstate Highway 95 is the main artery traversing south to north just west of the Florida cities of Cocoa and Titusville.

S65-45599 taken during orbit 106 of the Gemini V mission at 14:04 GMT on 28 August 1965. Original magazine number was GEM05-02-45599 taken with a Hasselblad camera and a 80mm lens. Film type was Kodak Ektachrome MS (S.O. -217). A black & white master of this image exists - photo S65-45543.

Photo STS049-79-024 was taken on STS-49 in 1992:
In this pre-capture view of the Intelsat VI communications satellite over Kennedy Space Center, Florida (28.0N, 80.0W), the disabled satellite can be seen in a decaying orbit over the KSC launch complex.
