Helping a colleague of mine at the International Women's Air & Space Museum with a question about astronaut ice cream. Her research shows that it was first used on the Apollo 7 mission and that one of the astronauts requested it.

Can anyone confirm this and do you know which Apollo 7 astronaut requested it?
